Oyster Bay is unveiling a rare Smokes & Wraps Food Festival. Smoked food has been popular since primitive times. Food is cooked in a smoking chamber which is usually a clay pot with simmering charcoal inside. Guests have a choice of flavours from various smokes such as thyme, cardamom, rose mary etc. Items on offer will include Thyme Smoked Chermoula Prawns, Beer Smoked Crab, Smoked Guava etc. Similary, cooking of food wrapped in leaves is prevalent in all Indian ethnic cuisines. They include lotus, betel, pepper, pepper mint, spinach, turmeric, banana, colocasia etc. While leaves such as Betel are edible, others like banana are used for the aroma. Oyster Bay will offer Betel Leaf Flambee, Patrani Machi and Nasi Lamek, apart from the reputed Fish Pollichathu from Kerala cuisine.
